Ingredients:
¾ lb. wholemeal
¼ lb. plain flour
½ t salt
½ t bread soda
½ pint sour milk
Directions:
1. Sieve flour, wholemeal, salt and rising agent into a bowl (rub soda first in palm of hand to remove small lumps).
2. Add most of the milk and mix to soft dough with a wooden spoon, adding more milk if necessary.
3. Empty onto lightly floured board and knead gently until smooth underneath and free from cracks.
4. Turn smooth side up; flatten into a round, about 5cm thick.
5. Place into a lightly floured tin.
6. Cut a cross on the top and brush over with a little milk.
7. Bake in a fairly hot oven, 425 degrees for about 40 minutes.
8. Cool on a wire rack/tray.
